Winter Apple & Rhubarb Granola Crumble

A cosy winter favourite, made with the season’s best produce and delicious Whisk & Pin granola.

Ingredients

  • 3 apples, peeled and sliced
  • 2 cups rhubarb, chopped into 2–3 cm pieces
  • 2–3 tbsp brown sugar or maple syrup
  • 1 tsp cinnamon
  • 1 tbsp cornflour/cornstarch (helps thicken juices)

Topping

  • 2 cups Whisk & Pin granola (gluten-free if needed)
  • 40–50 g melted butter
  • Optional: 2 tbsp almond meal for extra crunch

Method

  1. Heat oven to 180°C.
  2. Mix apples, rhubarb, sugar, cinnamon and cornflour in a baking dish.
  3. Toss granola with melted butter and sprinkle over the fruit.
  4. Bake 35–40 minutes, until bubbling and golden.

Serve warm with vanilla ice cream, custard, or Greek yogurt.
