Winter Apple & Rhubarb Granola Crumble
A cosy winter favourite, made with the season’s best produce and delicious Whisk & Pin granola.
Ingredients
- 3 apples, peeled and sliced
- 2 cups rhubarb, chopped into 2–3 cm pieces
- 2–3 tbsp brown sugar or maple syrup
- 1 tsp cinnamon
- 1 tbsp cornflour/cornstarch (helps thicken juices)
Topping
- 2 cups Whisk & Pin granola (gluten-free if needed)
- 40–50 g melted butter
- Optional: 2 tbsp almond meal for extra crunch
Method
- Heat oven to 180°C.
- Mix apples, rhubarb, sugar, cinnamon and cornflour in a baking dish.
- Toss granola with melted butter and sprinkle over the fruit.
- Bake 35–40 minutes, until bubbling and golden.
