Servings: Makes 10-12 Latkes
Ingredients
- 4 zucchinisÂ
- ½ sweet onion
- 2 Tbsp mozzarella cheese
- 3 Tbsp parmesan cheese
- 2 eggs
- ¼ tsp salt
- canola oil for frying
Instructions
- Grate the onion and zucchinis into a medium-sized bowl. Add the mozzarella, parmesan, eggs, and salt. Mix to combine.
- Heat oil in a frying pan over medium-high heat.
- When oil is hot, drop spoonful’s of batter into the oil. Cook for 1-2 minutes on each side until outside is golden and inside is cooked through.
- Repeat until all batter has been fried.
- Serve immediately, with a sprinkle of parmesan cheese.
